Above, a local distillery uses the constant humidity and temperature of a former military cave as an ideal place to store liquor using an ancient technique which enhances the pure taste of the alcohol.

Large jars hold the liquor stored in the caves at Tunnel 88 in Nangan Island, Matsu, Taiwan.

As you can see by the slick walls, there is a constant humidity within the caves. Summer weather conditions are sometimes uncomfortable outside. Summers are hot while winters are bitterly cold. The climate within the cave is a constant temperature and humidity which provides an ideal place to store liquor for the Matsu Distillery.
